Diana's Sickeningly Healthy Oatmeal Cookies (375 degrees, 15min. in preheated oven; makes c. 3 dozen) Ingredients * 1 c. water * 1 c. raisins * 2 tsp. cinnamon * 4 c. oatmeal * 1 c. flour, wheat germ, or a combination of both * salt (1 tsp. or a little less) * 2/3 c. nuts * 1/3 c. oil * 1/2 c. honey or brown sugar * 1/2 lemon, rind and all * 1 tsp. vanilla Directions 1. Simmer the water, raisins, and cinammon. 2. Mix the oatmeal, flour, salt, and nuts. 3. Puree the oil, honey/sugar, lemon, and vanilla. 4. Add the raisin-water-cinammon mixture, and puree that, too. 5. Add the pureed mixture to the dry stuff, drop tablespoonfuls of the resulting dough onto a cookie sheet, and flatten them slightly.
